Pinterest Pick of the Week!

As of late, I am totally loving all things Fall! So when I saw this on Pinterest I knew I had to share it with you!

Toilet Paper Pumpkins!!

They are soo cute and easy! Plus...no one would ever know they are toilet paper! Here's what you'll need:
1 roll of toilet paper
1 fat quarter of fabric (18 x 22 inches)
scraps of green fabric for the leaves
1 brown paper lunch sack

Tasty Tuesday's


This week I bring you....

Ham-Potato Casserole (Originally from Better Homes and Gardens years and years ago)

2 15 or 16oz cans Sliced Potatoes, drained
1 Cup Shredded Carrots
1 1/2 Cups Cubed fully cooked ham
1 small can condensed cream of mushroom soup (use 98% fat free for a light version)
1/4 cup shredded cheddar cheese (use low fat cheese for a light version)
1/8 cup milk
2 Tablespoons instant minced onion
Dash of ground black pepper
3/4 cup soft bread crumbs (1 or 2 slices)
1/4 cup shredded cheddar cheese for topping (use low fat cheese for a light version)
1 tablespoon butter or margarine, melted

Directions:
Layer half the potatoes and half the carrots in a 2-quart casserole dish. Stir together cubed ham, mushroom soup, 1/4 cup shredded cheese, milk and instant minced onion, and pepper. Pour half the ham mixture over the potatoes and carrots in the casserole. Repeat layers.
Topping:
Combine soft bread crumbs, 1/4 cup shredded cheese, and melter butter; sprinkle over casserole. Bake, uncovered at 350 degrees until heated through, about 45 minutes. Makes about 4-6 servings.

Tasty Tuesday's

I know I've been MIA for a while now and I'm so sorry! In June the cabin rental place I was working at made a TON of changes that I didn't agree with so that left me looking for a new job. I am now well settled into my new job as a Guest Services Rep. for an amazing hotel in the area. It is the only 4 star hotel in our area and has a Christmas theme which I love! Things have been going great and I truly love going to work each day. It took some time to get used to my new schedule but I'm adjusted now and will try and do better about blogging more often! Now time for another great recipe!


White Chicken Chili:

3 Cans Great Northern White Beans
3 Cans Pinto Beans
1 Brick of Pepper Jack Cheese, Grated. (I use Cabot Reduced Fat Pepper Jack to make it lighter.)
1 16oz tub of Sour Cream (I use fat free to make it lighter.)
1 1/2 Cup Salsa
1 Teaspoon Minced Garlic
1 Medium Onion, Diced
1 Teaspoon Ground Cumin
1 13oz Can of Chicken Breast in water, drain water
Red Pepper Flakes to taste

Directions:
Saute onion with chicken until onion is soft. Ever so lightly brown the chicken. Add garlic and cumin. Pour in beans, salsa and sour cream. Stir well, add grated cheese and heat through while stirring frequently to prevent cheese from burning to the bottom of the pot. Once cheese has been melted and all ingredients are incorporated, enjoy!

I love this chili sooo much all year long! It is also great to eat using Scoops Chips!
